Welcome to the new year all! Hope everyone had a great
holiday season and I know there are a lot of new year's
resolutions that revolve around food so ready to get
cookin' with me again?
You know how they say that an apple a day keeps the doc
away...well with getting that daily dose of vitamin "C"
it sure makes sense. But how many plain apples can you eat
without getting a case of the "dulldrums"? How about trying
a refreshing salad recipe as a lunch or side dish that now
only has APPLES but is low in fat, sodium & virtually
Cholesterol Free. It's a COLD TORTELLINI APPLE SALAD that
uses the refrigerated cheese tortellini so it's easy on the
schedule. This is a great lunch idea too for bringing to
work but be sure to keep it chilled until ready to eat.
Something like this makes it easy to get your daily dose
of that "C".

RECIPE: COLD TORTELLINI APPLE SALAD
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
3 tablespoons concentrated apple juice (you can get this frozen)
3 tablespoons light corn syrup
1 teaspoon cider vinegar
2 teaspoons firmly packed brown sugar
1/8 teaspoon garlic salt
Dash pepper
1 package refrigerated cheese tortellini (9 ounce)
2 cups chopped apples
2 cups shredded salad greens
1 cup of mandarin orange slices or strawberries when accessable
1/2 cup thin sliced celery
1/4 cup sliced green onions
2 tablespoons pine nuts
DIRECTIONS:
Combine apple juice concentrate, corn syrup, vinegar, sugar,
garlic salt and pepper. Cover and refrigerate. Cook the
cheese tortellini according to package directions. Drain and
cool thoroughly. In large mixing bowl combine tortellini and
remaining ingredients. Toss gently with apple juice dressing
and serve immediately.
Yield: 6 servings

STARVE A COLD...FEED A FEVER?
Or is it "Starve a fever and feed a cold"? I always used to
get that saying mixed up but with cold and flu season upon us
it's a good time for some prevention tips. As simple as it
sounds, good hand washing will reduce the incidence of
bacterial and viral infections by one-third to one half and
stomach viruses by up to 80%!
Practice a ritual of good hand washing by using these tips:
1. Use warm water.
2. lather up for at least 15 seconds (I learned on Oprah
last year to sing one verse of "Happy Birthday" to
yourself to keep track of this and haven't been able to
get it out of my head since.)
3. Rub front of hands together to cause friction and get
between fingers and under nails too.
4. Rinse thoroughly and dry. * Be sure to change towels often.
