& Onto food... Well Hubby is jonesin' for a fishing trip
"up north" so much that we broke down and did a fish fry
last night with his special recipe QUICK BAKED CATCH OF
THE DAY. This is a keeper to pass along to anyone who
likes to cook their catch (we had to visit the store this
time for the main ingredient). Any fish will do but we've
determined that walleye is the best (even if you cheat
and it comes from the local fish counter). Do this up with
some fried potatoes and creamed corn and you've pretty much
got yourself a baked shore lunch....minus the shore that is.

RECIPE: QUICK BAKED CATCH OF THE DAY

INGREDIENTS:
Walleye or other fresh fish fillets
Milk
1 bag of potato chips
1/2 cup parmesan cheese
1/2-3/4 teaspoon thyme
1 sleeve soda crackers, crushed
4 tablespoons melted butter

DIRECTIONS:
Cut fish into you favorite-size pieces. In Ziploc bag, crush
potato chips. Add parmesan cheese and thyme to bag and shake
well. Dip fish in milk, then coat with potato chip mixture.
Spray two large cookie sheets with non-stick cooking spray
and sprinkle with crushed soda crackers. Place fish on the
cookie sheets. Drizzle with melted butter. Bake uncovered
at 500 degrees for 10 minutes or less, just until fish flakes.

WHEN IS THE THE FISH OFFICIALLY COOKED?

It is very easy to tell when fish is done. All you have to
do is break a piece in half and see if it has cooked all the
way through. You can tell by the color change. If you have
thick pieces, you can watch the color change on the side
travel to the middle. Flip and watch the fish cook through
the opposite side. You are done when it reaches the middle
and it is the same color all the way through. Do not give
it an extra minute or two for good measure or you will
overcook it.

If you batter the fish before cooking, you will have to
sacrifice a piece to test by breaking it in half to check
it. Time it so you will know how long to cook the rest.
This won?t take long. Fish cooks very fast and high heat
is fine.
