Now that the BBQ weather is coming back I've got a
little something different in the salad department to
go along with whatever you "Q" up. This CHINESE NOODLE
SALAD is a noddle-like coleslaw and can be made by the
buckets for BBQs picnics or potlucks. It's usually the
first thing to go so give it a whirl.

RECIPE: CHINESE NOODLE SALAD
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*=

INGREDIENTS:
1 head cabage
1/2 green onions; bunch, chopped
2 packages Ramen Noodles; uncooked and broken into pieces
(discard seasonings)
2 tablespoons sunflower seeds
1 cup sliced almonds
1/4 cup margarine
1/2 cup sugar
3/4 cup oil
1/4 cup red wine vinegar
1 tablespoon soy sauce
DIRECTIONS:
Chop cabbage in medium pieces, add chopped green onions.
Brown noodles, sunflower seeds, almonds in margarine
(set aside to cool). Boil sugar, oil, vinegar, and soy
sauce, cool completely. Toss everything together just
before serving. (Doesn't keep well overnight because of
the consistency)

A LITTLE ABOUT LETTUCE:
Leaf lettuce has more vitamins A and C than head lettuce.
Wash wilted lettuce in cold water, shake it fairly dry, cover,
and put in the refrigerator. In about 12 hours the lettuce
will have freahened up surprisingly.
The best way to wash a head of lettuce (also escarole and
other greens that come in heads or bunches) is to fil a large
bowl or pot with cold water and pump the head of lettuce,
stem side up, up and down in it. Do this a couple of
changes of water if necessary.
